EASY VEGAN ALMOND BUTTER BROWNIE RECIPE


This vegan brownie is the perfect option for a dessert! 

It's fluffy, easy and delicious

Ingredients

     
  • 1 packed cup pitted Medjool Dates Or 1 and ½ cup of date syrup
  •  1 cup Cacao Powder
  • 1 ⅓cup Almond Butter
  • 1 Flax Egg (1 tbsp Ground Flax or Chia Seeds + 3 tbsp Water)
  • ½ tbsp Baking Powder
  • ½ tsp Salt
  • ½ cup Chocolate Chips or Chunks, plus more to sprinkle on top
Instructions

  1. Preheat the oven to 175ºC or 350F.
  2. In a small bowl, combine the Ground Flax egg ( or the chia seeds egg ) with Water to form a Flax Egg. Let sit for 5 Minutes to thicken.
  3. Add all ingredients, to the Food Processor, except for the Chocolate Chips. Blend for 1 minute, or until the batter is thick and smooth.
  4. Next, pour the Chocolate Chips into the Food Processor and pulse until evenly distributed.
  5. Grease one pan, and spread the Brownie Batter evenly into it using a spatula.
  6. Bake for 15-18 Minutes, then let cool completely. The Brownies may not look cooked when they first come out of the oven but will thicken as they cool.
  7.  Leftovers are best kept at room temperature for up to 3 days, or the fridge for up to one week. You can also freeze these and thaw as needed.
Notes

- You can replace the butter for any nut butter you want or replace the date syrup for any syrup you prefer (etc) but remember that the taste is going to be different!!
