Vegan + Healthy Banana Pancakes

These pancakes are perfect for breakfasts and snacks. They are light, fluffy and full of flavor

Preparation time: 5 minutes
Cooking time: 12 minutes
Total time: 17 minutes
Ingredients:
1 large banana, shelled
1 cup and ¾ of any type of flour
1 tablespoon and ½ of any kind of sugar
1 teaspoon and ½ of yeast
3 tablespoons coconut oil (other oil or olive oil also gives)
⅛ of tablespoon of salt
1 cup of vegetable drink tea
Method of preparation
1. In a large bowl, knead the banana. Add coconut oil and vegetable drink. Stir until smooth
2. Add the flour, sugar, baking powder and salt. Stir again until smooth
3. Place a spoonful of coconut oil in a frying pan and light the heat.
4. When the frying pan is hot put two tablespoons of the preparation to form a circle. When the pancake starts to get some balls turn the pancake and wait for 3 to 4 minutes.
5. Repeat step 4 until the batter ends.

Note: over the pancake you can put whatever you want. I especially like to put butter of some kind of walnut (peanut butter, almond butter ...) syrup of dates (other syrup or honey) and fruit. In these pancakes I put pear and peanut butter.

Et voila, breakfast made, I hope you like it !!!
